Slush: … Commercially available powered flavorings are mixed in large plastic buckets with potable water using a handheld mixer … poured into … slush machine … We have several of these machines with different flavors lined up facing the public. The vendor sells the cup … patron fills the cup from … slush machines … Pizza: The three parts of pizza is the dough, the sauce and the toppings. We purchase pizza dough mix. The mix with the proper amount of warm … potable water and olive oil is mixed in a commercial mixer. It is taken from the mixer, placed on the work counter (dusted with the mix), covered with a clean, damp, cloth and left at room temperature for the yeast to activate and cause the dough to rise. The dough is punched down by hand twice during the process … to allow the fermentation process to continue. After the dough has risen … cut using a commercial grade knife, weighed so a consistent amount of dough is used for each finished pizza. If the dough is not going to be used right away it is wrapped in plastic and placed into the refrigerator. If it is to be used now, it is stretched and shaped into a round shape … might toss and spin the dough into the air … The dough is stretched and placed into the proper size pizza tin or pan. Sauce is ladled on top of the pizza dough. Different toppings … are placed on top of the sauce … The toppings could include one of several types of meat, vegetable and/or cheese items that are purchased commercially, pre-shredded and/or pre-sliced. The pizza is placed into the … Oven at the correct temperature and time … then removed from the Pizza Oven and placed under heat lamps on the front counter, where it is sliced and served to the patron using a pizza slicer. The employer would position the food concessions trailer in the assigned location at the event. During transit, metal awnings cover the glass windows. The worker would unlatch the locks, using their hands. The gas struts would raise the awnings to the correct height automatically. As items would shift during transit, the worker would carefully open the door, observe if everything was in the correct position, and if not, slide whatever was out of passion back into the correct location. Front counter, cash register, counter cloth/banner, trash cans, condiment, cutlery and napkin kiosk(s) would be unloaded by hand and placed into the correct locations. Each item is designed for travel and easy setup, with nothing weighing more than about 20 pounds. Original F.a.2: Perform variety of attending duties at traveling carnival food concession, such as setting up, tearing down, and operating mobile food concessions by taking orders and serving food and beverages. Details of tasks that may be involved in this position: May communicate with customers regarding orders; scrub counters, steam tables, and other equipment and clean fountain equipment; accept payment from customers and make change as necessary; perform cleaning duties, such as sweeping, mopping and washing serving devices, to keep equipment and facilities sanitary; serve food, beverages, or desserts to customers attending fair or festival; prepare daily food items, and cook simple foods and beverages such as sandwiches, pizza, deep fried Oreos, lemonade or other fair foods; wrap menu items for serving; set up dining areas; and prepare and serve cold drinks, frozen milk drinks, or desserts, using drink-dispensing, milkshake, or frozen-custard machines.
